Pumpkin skin dry curry



Pumpkin is rich source of vitamins and minerals and its all parts from skin to seed are edible. Pumpkin has very hard shinny skin. You need to have a sharp knife to cut and towel to keep it steady while cutting. Cut the pumpkin into manageable pieces before pealing the skin.

My mom used to prepare dishes with pumpkin skin. Here I am sharing you one dish with simple ingredients and its very easy to make, except peeling the skin off from pumpkin. See the ingredients list and instruction to prepare this simple recipe at your kitchen

Ingredients

  1. Pumpkin skin -  1 cup
  2. Onion – 2 medium sized
  3. Red chilli powder – ½ tablespoon
  4. Green chilli – 1-2 (cut in round shape)
  5. Mustard seed – ½ tablespoon
  6. Cumin seed – ½ tablespoon
  7. Turmeric powder – ½ tablespoon
  8. Grated coconut – ½ cup
  9. Bengal gram dal – 2 tablespoon
  10. Water to cook 
  11. Oil – 2 tablespoon
Instructions

  • Finely chop pumpkin skin and onions separately.

  • Heat oil in a pan and crackle the mustard seeds.
  • Into it, add Bengal gram dal/ besan split dal/ Kadala parippu. Sauté till the dal turns into light brown color.

  • Add chopped pumpkin skin, turmeric, salt and cumin to it and sauté for 1-2 minutes

  • Sprinkle little bit of water to it. Cook pumpkin skins till tender.
  • Add chopped onions and green chillies and stir till onions become transparent in color.
  • Add red chilli powder and garam masala. Stir well.
  • Add grated coconut into the pan. Mix all.
  • Tasty crunchy pumpkin skin dry curry is ready. Serve it with chapatti / rice
