Masala Egg Rice


Its a super delicious, non veterinarian rice recipe. This rice dish is rich with flavors of tomatoes and spices.  You can prepare this dish with freshly cooked or leftover rice.

Serving: 1-2 people

Ingredients 
  1. Basmati rice - 1 &1/2 cup
  2. Cloves - 2 to 3
  3. Black pepper -2 to 3 
  4. Cinomin stick - 1 small piece
  5. Egg - 4 to 5
  6. Tomatoes - 3 to 4 medium sized
  7. Onion - 1 medium sized
  8. Green chillies - 1-2
  9. Turmeric powder - 1/2
  10. Garlic cloves - 1 to 2
  11. Ginger - 1 small piece 
  12.  Red chilli powder - 1 tablespoon
  13.  Garam masala powder - 1/2 tablespoon
  14. Vegitable oil/ Ghee - 2-3 tablespoons 
  15. Finely chopped coriander leaves 
  16. Salt according to taste
Instructions
  1. Wash and sock rice for 30 mins in 2 cups of water.
  2. Cook washed rice with 1 tablespoon of oil/ ghee, cloves and black pepper. Once rice is half cooked, stain and keep it aside.
  3. Beat eggs and salt in bowl until its gets blend perfectly.
  4. Heat oil in a pan and add beaten egg and cook it over medium heat. Stir occasionally to get large soft pieces. Pour the scrambled egg into one plate.
  5. In same pan saute chopped onions with little bit of oil. Add little bit of salt to it. Transfer fried onions to a bowl.   
  6. Add tomatoes, greens chillies, ginger, garlic, turmeric powder and chilli powder into a jar. Blend until smooth puree.
  7. Heat the same pan and add 1 tablespoon of oil. Add cinnamon stick to the hot oil. When it releases its pleasant aroma, pour the masala pure into it. Saute it occasionally. Once the row smell of veggies goes away add garam masala to it. Into this mixture add scrambled egg and onions. Mix it well and allow it to cook for 1-2 minutes. No need to stir the mixture at this stage.
  8.  Add cooked rice to the mixture and stir it till the rice gets coated with the masala.
  9. Cook it for 2-3 minutes on low flame.
  10. Garnish with Coriander leafs and serve it hot with your favorite raita.
