Egg burji - Indian style scrambled egg

Egg burji is a kind of scrambled egg, rich with Indian spices and vegetables. In Kerala we have different names for this recipe - mutta chikkiyathu/ mutta thoran. Onions, tomatoes and green chillies are common veggies used to prepare this dry dish. It goes well with anything. You can enjoy this fluffy dish with your breakfast / lunch/ dinner.

Egg burji is an Indian style scrambled egg. This dish is very easy to make and extremely appetizing. You can eat it as it is or can be served with rice and other breakfast items. You can add vegetables according to your taste. Here I have used onions, tomatoes and capsicum. See below ingredients list and instructions with pictures of the recipe.

Ingredients
  1. Egg - 5 
  2. Onion - 3 medium sized
  3. Capsicum - 1 small sized
  4. Tomato - 2 small sized
  5. Green chilli - 3-4 
  6. Red chilli powder - 1/2 tablespoon
  7. Pepper powder - 1/2 tablespoon
  8. Garam masala - 1/4 tablespoon
  9. Milk - 2 tablespoon
  10. Salt to taste
  11. Coriander leaves to garnish
Instructions 

  • Coarsely chop all veggies separately and keep it aside.
  • Break the eggs one by one into a small vessel
  • Beat the egg until the texture changes form liquid to thick and foamy. Add turmeric powder and pepper powder and whisk it vigorously. There should not be any lumps in the mixture.  
  • Add milk to the mixture and mix well. This step is optional. If you don't want to add milk to your egg burji, you can skip this step.
  • Head oil in a pan. Once oil is hot add mustard seeds to it and let it splutter.  
  • Add chopped onions to it and saute well till they are cooked well. Onions color will change its color to transparent. 
  • Add copped tomatoes and capsicum to the cooked onions. Mix all the veggies and stir till it get cooked perfectly.
  • Add turmeric powder, salt, garam masala powder and red chillies to the cooked veggies. Combine all in low flame.
  • Add green chilies to the pan and saute it for 1-2 minutes
  • Pour beaten egg. Stir it continuously and vigorously. Cook it till the liquid gets dry. 
  • Turn off the flame and garnish it with coriander leaves.
Note
You can add your favorite veggies while preparing egg burji to enhance the taste and nutritional values.
