Mashed Spicy Cauliflower Potato Stir Fry


Cauliflower is rich in vitamins and minerals can be consumed in any form, say raw, fried, boiled. Raw cauliflower have an unpleasant smell which will goes away once it get cooked. 

In my home, we used to prepare different verities of dishes with this vegetable.  Here is the one recipe which I have experimented, tested and tasted. Smooth and creamy in texture, it tasted good with rice.

Below are the list of ingredients and step by step instructions with pictures

Ingredients
  1. Cauliflower - 1 medium sized(cut into cubes)
  2. Onions - 3 medium sized(sliced from root to stem)
  3. Potato - 3 medium sized
  4. Green chilli - 7-8(cut lengthwise)
  5. Turmeric powder - 1/2 teaspoon 
  6. Oil to shallow fry 
  7. Salt to taste
Instructions
  • Peel the skin of cleaned potatoes, cut it into cubes and keep it aside.  
  • Slice cleaned onions and chillies and put aside.
  • Separate cauliflower florets and sock it in enough water with 1/2 tablespoon and 1/2 salt. Keep it for 1/2 hour.
  • Drain the socked cauliflower florets and pour enough hot water into it. Let it there for 10-15 mins.  This will let the hidden worms in florets to come out. Take out the florets and clean it in running water.
  • Cook florets and cubed potatoes in 1/2 cup of water and turmeric powder. When cooked, slightly mash the veggies together .
  • Once water gets evaporate completely add oil to it. Stir occasionally.
  • Add onions to the cauliflower-potato mixture. Add salt and mix it well. Cook till onion turn translucent. 
  • Add sliced green chillies and continue stir the mixture. Cook it for 5 minutes. Blend occasionally

  • This spicy stir fry goes well with rice and chapatis
Note:
You can add tablespoon of garlic paste and 1/4 fried cumin seeds while frying the cauliflower and potato mixture for added flavor.
