Dosa


This dish is one of the most popular South Indian break fast item. It is made from fermented batter of rice and split black gram. This is very easy to digest and very health breakfast item 😋. Typically dosaa is served hot with sambar/ coconut chutney/ spicy dry chutney. If you are a non veterinarian, don't worry. This dish goes well with non veg curries too.


You can try different verities of this dish like,
  • Masala dosa - wraps with vegetable dry curry stuffing 
  • Paniyaram - add spicy sauted vegetables/ jaggery/ sugar to it and deep fry in a special pan which is having multiple holes in it
  • Ghee roast- a super thin version of  dosa with clarified butter(Ghee) added to it.
The list goes on and on 😊.

Here I am explaining how to make plain dosa [thick version] with step by step instructions with pictures. Let see the ingredients before proceeding.

Ingredients
  1. Raw rice - 2 cups
  2. Split black gram - 3/4 cup
  3. Cooked rice - 1/4 cup 
  4. Water to grind the batter
  5. Salt to taste
Instructions 
  • Wash the rice and black grams until water is clear. Soak rice and split black gram for 6 hrs. Drain it and keep it aside.


  • After 6 hrs, grid raw rice with cooked rice until the batter is smooth. You can add water while grinding it. Batter should moderately thick. Pour rice batter to a vessel. In the same mixer grind split grams. Grind till it get the same consistency as that of rice batter. Add the batter to the rice batter and mix it together. Keep the batter overnight for fermentation.
  • Next day, you can check the consistency of the batter. If the batter is too thick add little bit water to get the desired thickness. Add salt to taste and mix well. Scoop out batter to oil greased hot pan.
  • Spread out batter evenly with the base of the ladle. You can decide on the thickness that you want for the dosa while spreading batter on the pan. This should be done on low flame. Otherwise the batter will get cooked if your spreading the batter slowly on pan.
  • If the dosa you prepared is thick, then you have to flip it to let the other side to cook well. 
  • Soft, tasty dosa is ready 😋. You can serve it hot with sambar or coconut chutney.

Note:
Dry spicy chutney recipe
Mix 2 tablespoon of red chili with 1 tablespoon of salt. Mix the mixture well and add salt to taste.
