Beans thoran/ stir fry with coconut


Thoran is a popular Kerala vegetable stir fry with coconut, garlic and spices. This dish is commonly served as a side dish for Kerala meals, especially in Sadya - traditional Kerala feast. Some places in  Kerala thoran is also called as "upperi". Thoran can be made with verity of vegetables. Today I am sharing recipe of Kerala style beans thoran.


Here is the ingredients used and instructions with step by step pictures to follow this fiber rich dish at your home.

Ingredients
  1. Beans – 250 gm
  2. Grated coconut – ½ cup
  3. Red chilli powder – 1 tablespoon
  4. Cumin seeds – ¼ tablespoon
  5. Garlic – 4 cloves
  6. Turmeric powder – ½ tablespoon
  7. Water to cook
  8. Salt to taste

Instructions
  • Chop beans into small pieces and keep it aside

  • In a pan add water, chopped beans , turmeric and salt . Cover the lid and let it cook.
  • Mean time we will see how to make coconut spice mixture for this recipe. Add coconut, cumin, garlic cloves and turmeric to a mortar and pestle. Crush all the ingredients together.
  • Add this mixture to the cooked beans. Cover coconut mixture in the cooked beans as shown in below picture. Cover the lid and cook on low flame for 2 minutes.

  • Combine all the items in pan. Tasty beans thoran is ready with rice.
