Thoran is a popular Kerala vegetable stir fry with coconut, garlic and spices. This dish is commonly served as a side dish for Kerala meals, especially in Sadya - traditional Kerala feast. Some places in Kerala thoran is also called as "upperi". Thoran can be made with verity of vegetables. Today I am sharing recipe of Kerala style beans thoran.
Here is the ingredients used and instructions with step by step pictures to follow this fiber rich dish at your home.
Ingredients
- Beans – 250 gm
- Grated coconut – ½ cup
- Red chilli powder – 1 tablespoon
- Cumin seeds – ¼ tablespoon
- Garlic – 4 cloves
- Turmeric powder – ½ tablespoon
- Water to cook
- Salt to taste
Instructions
- Chop beans into small pieces and keep it aside
- In a pan add water, chopped beans , turmeric and salt . Cover the lid and let it cook.
- Mean time we will see how to make coconut spice mixture for this recipe. Add coconut, cumin, garlic cloves and turmeric to a mortar and pestle. Crush all the ingredients together.
- Add this mixture to the cooked beans. Cover coconut mixture in the cooked beans as shown in below picture. Cover the lid and cook on low flame for 2 minutes.
- Combine all the items in pan. Tasty beans thoran is ready with rice.
