Ivy gourd stir fry with fried potato

 Ivy gourd/ Tondli/ Kovakkai is high in nutritional value. Its looks like a tiny cucumber. This vegetable is used in verity of Indian dishes. It is crunchy if you eat it raw. In my native place we are having this plant in our vegetable garden.  This plan is super climber and climbs on everywhere and we used to get so much fruits from it.


 My mom used to prepare different verities of curries with it. Ivy gourd stir fry is one of it. I have experimented this dish with my own style.  Instead of frying potato along with ivy gourd I have added fried potatoes with spices and chat masala.

Here is the recipe with ingredients and step by step instructions with pictures

Ingredients

  1. Ivy gourd  – 250 gms
  2. Onions – 2 large sized
  3. Potato – 2 medium sized
  4. Green chillies – 3-4 cut lengthwise
  5. Turmeric – ½ tablespoon
  6. Chat masala – a pinch
  7. Salt to taste 
  8. Oil to shallow fry potatoes and ivy gourd  
  9. Curry leaves 

Instructions

  • Wash ivy gourd thoroughly. Cut its edges and slice them into small pieces. 
  • Heat oil and add potatoes, red chilli, turmeric and pepper powder. Shallow fry the potatoes in the spices. Once cooked perfectly transfer  fried potatoes into a plate and sprinkle little bit chat masala
  • In the same pan add sliced ivy gourd, turmeric and salt. Mix all the items well and shallow fry till the veggies are cooked well
  • Add Onions and green chillies into the pan and sauté till onions cooked completely.
  • Into this add curry leaves. 
  • Finally add fried crisp potatoes into it. Mix all the items.

Tasty ivy gourd stir fry with fried potatoes are ready to serve. Enjoy it with hot rice/ chapattis
