Idiyappam/ Kerala style rice noodles

Idiyappam is a popular South Indian steamed breakfast item prepared with roasted rice flour. Rice noodles are prepared by pressing dough made with rice flour, water and coconut milk in a special mould. Rice flour can be replaced with wheat flour or ragi/ millet flour. Egg curry or chicken curry or vegetable stew is usually served along with it.  



Preparing this dish require some effort as you have to press the rice dough through small pores of the mould. But trust me it is worth for every bit of effort 😊.

To prepare this recipe at your home follow below ingredients and instructions with pictures

Ingredients
  1. Rice flour -  2 cup
  2. Water - 1 cup
  3. Ghee - 2 tablespoon
  4. Coconut milk - ½ cup
  5. Grated coconut - 1 cup
  6. Salt to taste 

Instructions
  • Roast rice flours in a dry iron pan for 5-6 minutes or till it releases roasted aroma. Keep it aside and let it cool

  • Boil water in a deep vessel. Add ghee to the hot water. Once water starts boiling, turn off the flame and add rice flour to it. Stir it well while pouring the rice flour to the hot water.



  •  Transfer the mix to a large plat and let it cool

  • Using your hands, blend together until you get a smooth dough. Sprinkle coconut milk while mixing the rice mixture. Cover the dough for 15- 20 minutes.


  • Add grated coconut to the idli mould and keep it aside. You can grease oil on the idli mould to avoid sticking noodle on it. 
  • Take a small portion of the dough and fill it in the mould. Close lid of the mould and start pressing the dough with the help of mould handle. 

  • Press the noodles into the each idli mould as shown below


  • Add grated coconut to on top of the noodle and place each moulds as shown below. Place this moulds inside the steamer and steam noodles for 7-9 minutes.


  • Take out steamed rice noodles and serve hot with traditional egg curry/ vegetable stew.
