Chakkakuru mezhukkupurati/ Jackfruit seeds stir fry

In Kerala, jackfruit is commonly called as chakka. There are two common verities of jackfruit available in Kerala, one is Koozha and another is Varikka. When the jackfruit is in season, we used to prepare different verities of dishes with it. Taking out the fleshy pieces after cutting open the jackfruits is tedious. We used to smear oil in our palms while we deal with jackfruits as it is having a sticky white fluid. We used to preserve seeds and flesh of jackfruits for later use.  


Excellent tasty dishes are prepared with seeds and fleshy pieces inside jackfruit. Recipes are usually consumed with hot rice. Today, I am going to share an super tasty shallow fried jackfruit seeds recipe. 

Ingredients 
  1. Chakkakuru/ jackfruit seeds - 1 cup
  2. Red chilli powder - 1 tablespoon
  3. Coriander powder - 1 ½ tablespoon
  4. Water to cook - ¾ cup
  5. Garam masala - a pinch
  6. Oil to fry
  7. Salt to taste
Instructions 
  • Remove white thin skin and scrap off the brown skin too from the seed. 

 
  • Slice the seeds into lengthwise and keep it aside.
  • Head a pan and add water, sliced seeds, turmeric and salt. Combine all the items in the pan and cover the pan with a lid. Let it cook for few minutes. Occasionally check the seeds, once the water is evaporated completely add oil and stir occasionally. Keep flame on medium. 
  • Add onions to the cooked and slightly fried seeds and mix well.
  • When onions are translucent, add red chilli powder, coriander powder and garam masala to it. Stir well.
  • Shallow fry the seeds in spice mixture for few minutes. 
  • Tasty chakkakuru mezhukkupurati /jackfruit seeds stir fry is ready to serve. Enjoy it with hot rice!! 😊

Note
Cleaning seeds may be difficult, I am having a tip to handle it. Remove the thin white skin from the seed and sock the them in water for ½ hour before pealing the brown skin form the seed.
