Kerala style Pacha cheera thoran/ amaranth stir fry

As Spinach comes under leafy vegetables category, including it in your diet is good for your health. This seasonal super food, loaded with vitamins and minerals are used in different cuisines. In Kerala, spinach is commonly cooked as thoran - a coconut based dish. We used to get pacha and chumanna cheera in market. Pacha in Malayalam means green and Chumanna means red. This dish goes well with rice and roties. 

In this post, I am sharing a delicious side dish recipe with spinach prepared in Kerala style. See the instructions with photos to follow along.

Ingredients 
  1. Pacha cheera/ Spinach - a bunch
  2. Mustard seeds - 1 tablespoon
  3. Shallots -  2 
  4. Garlic cloves -  3-4 
  5. Grated coconut - 1 cup
  6. Cumin seeds - ¼ tablespoon
  7. Oil - 2 tablespoon
  8. Salt to taste
Instructions
  • Heat oil in a deep vessel. Add shallots to it and saute till onions fried well

  • Add mustard seeds into the pan and let it crackle.

  • Add cleaned, finely chopped pacha cheera/ spinach leafs into the pan


  • Immediately add turmeric powder and salt to it. Sprinkle little bit of water on to the spinach and then cover the lid. Cook it for few minutes.


  • Mean time crush cumin seeds and garlic cloves in a mortar and pestle. 


  • Add this crushed cumin seeds and garlic cloves into the pan. 


  • Further add red chilli powder to it. Combine spices and leafs together


  • Once spinach is cooked completely, add grated coconut. Give a good stir. 


  • Kerala style pacha cheeta thoran/ spinach dry curry is ready to serve on plates. Enjoy it with hot rice or roties.
