Misal pav

Misal pav is a popular Mumbai street food and a traditional Maharashtrian breakfast or snack item. It is prepared with sprouted Matki/ moth beans, tomatoes, onions and Indian spices. While serving this dish is topped with farsan/ sev, coarsely chopped fresh onions and fresh coriander leaves. This curry is usually served along with toasted pav/ plain bun and lemon slices.

In this recipe, I have made a gravy with a paste of ginger garlic paste, onions, and tomatoes and then added cooked sprouts to it. 

Here is the recipe with list of ingredients used and preparation steps with photos.

Ingredients
  1. Matki/ moth beans sprout - 1 cup
  2. Chopped onions - 1 cup
  3. Chopped tomato - 1 cup
  4. Cubed potatoes - 1 cup
  5. Ginger garlic paste - 2 tablespoon
  6. Red chili flakes - 1 tablespoon
  7. Cumin seeds - ½ tablespoon 
  8. Red chili powder - 1 ½ tablespoon
  9. Coriander powder - ¾ tablespoon
  10. Turmeric powder - 1 tablespoon 
  11. Garam masala - ½ tablespoon 
  12. Oil - 2 tablespoon
For garnishing
  1. Onion - ½ cup
  2. Coriander leaves
  3. Lemon slices
  4. Farsan as required
Instructions
  • Firstly we will see how to make usal. For preparing it, add water, sprouts, and cubed potatoes into a pan. Cover the lid and cook it
  • Add turmeric powder, lime juice and 2-3 pinch of salt to it. Mix well. Our usal is ready, keep it aside.

  • Now we will see how to prepare the gravy. Heat oil in a pan. Once the oil is hot toss in cumin seeds. Wait till it sizzles  
  • Add ginger garlic paste. Stir till raw aroma goes off
  • Add onions to it. Saute till onions are translucent 
  • Add tomatoes to it. Stir till tomatoes are mushy 
  • Add 1 tablespoon of chili flakes to it and combine well. Keep it aside to cool down.
  • Place the cooled veggies into a food processor/ mixer. Pulse the veggies into a smooth paste. Add this paste to a hot pan. Saute it for 2 minutes

  • Add red chili powder, coriander powder and garam masala to the paste. Cook till the mixture starts leaving oil.


  • Add cooked Matki/ moth beans sprout and potato mixture to it. Coat the sprouts mixture with the veggie paste. Add water to it till you get the right watery consistency. 
  • To prepare misal, add the curry to a bowl and then add farsan. Lastly, garnish it with chopped onions and coriander leaves. Serve hot with pav and slices of lemon
