Boiled egg stir fry with onions and tomatoes

This recipe is a quick to make and tasty hard-boiled egg recipe. Boiled egg stir fry with onions and tomatoes is an easy version of egg roast. This recipe is prepared by shallow frying eggs with caramelized onions, tomatoes and spices. Hot rice, roties, appam, idiyam are the best partners of this delicious recipe.

Ingredients
  1. Hard-boiled egg - 5
  2. Onions - 2 medium sized
  3. Tomatoes - 1 large
  4. Green chilli - 3-4
  5. Red chilli powder - ½ tablespoon
  6. Black pepper powder - ½ tablespoon
  7. Coriander powder -1 tablespoon
  8. Garam masala powder - 1 small tablespoon
  9. Mustard seed - 1 tablespoon
  10. Oil - 2 tablespoon
  11. Salt to taste
Instructions
  • Heat oil in a pan and add mustard seeds into it. Waite till the seeds starts to pop

  • Now all sliced onions and green chillies goes into the pan.

  • When onions changes it color add tomatoes, turmeric powder and salt to it. Sate till powders mix well with vegetables.

  • Further add red chillies, coriander powder, pepper powder and garam masala to the pan. Combine all together.

  • Add boiled eggs into it and mix till the masala mixture coat well on the eggs

  • Spicy boiled egg stir fry with onions and tomatoes are ready. Serve it with your breakfast/ lunch/dinner.
