Ragi puttu - Kerala style Steamed Rice cake



 Puttu is one of the popular breakfast dish in Kerala. Its a steamed breakfast item, prepared in a special vessel with two parts. Lower section is to boil water and in the upper section is used to layer the wet rice flour. Steam from the boiled water passes through a narrow opening in the lower section lid cooks the rice flour. Pierced lid in the upper section will prevent rice flour to fall into the lower section. Usually Coconut is used to layer both end of the steamer.  

Here is the ingredients and steps with picture to prepare this healthy breakfast at your home.

Ingredients
  1. Rice flour - 1 12 cup
  2. Ragi flour - 12 cup
  3. Milk - 1 small cup
  4. Water - approximately 14 cup
  5. Grated coconut - 1 cup
  6. Salt to taste
Instructions
  • Grate coconut coarsely. This we will use while layering the flour mix
  • Roast rice flour and ragi flour. Keep it aside and let it cool.
  • Add enough salt and milk to the cooled mixture and mix it well.  If the mixture is not wet enough, drizzle water little by little and combine well.
  • Now we will start filling cylindrical steamer with flour mixture and grated coconut. First make a thin layer of coconut and then fill the cylinder with flour mixture. Cover the rice flour on top with grated coconut and close the lid. 
  • Place the steamer over the pressure cooker. Cook till the steam comes out. Remove the steamer from the pot, open it and gently push the cake from the rear end of the steamer using a thin iron road. Repeat the process to make more rice cake.
  • This breakfast recipe goes well with Bengal Gram Curry, green gram curry and chicken curry.

Note
You can prepare steamed rice cake/ puttu with wheat flour, ragi flour and semolina. Also for layer you can use chopped bananas/ dry chicken curry.😊
